Chikuzenni is a type of Japanese cuisine, and is a type of simmered dish that mainly uses vegetables. It is made by carefully cutting vegetables one by one and simmering them with stock and seasonings. Chikuzenni is a traditional dish mainly eaten in the Chikuzen area of ​​Fukuoka Prefecture in the Kyushu region.

There are various ingredients for Chikuzenni, and the following are generally used, but the ingredients and seasonings may differ depending on the region or household:

  • Radish
  • Carrot (carrot)
  • Konnyaku
  • Burdock
  • chicken or pork
  • Mushrooms such as shiitake
  • Other vegetables (e.g. sweet potatoes, bamboo shoots, enoki mushrooms, etc.)

When simmering these vegetables and ingredients, seasonings such as dashi stock, soy sauce, mirin, sugar, and sake are used. The ingredients are simmered evenly, bringing out the flavor and sweetness of the vegetables. The broth soaks into the ingredients, giving the stew a deep flavor.
